I just returned from the 2010 Catersource in Las Vegas, NV. What a great trade show! 5,000 attendees and a whole lot of venders selling plastic to go containers! It became obvious half way through the our first day of exhibiting one of our newest Concessionaire trailers just how new the portable wood fired oven concept is. The people that stopped by the booth could not believe what they were looking at. Aside from seeing the business credibility factor perhaps the most stunning thing was the fact that wood fired oven cooking is still so new to the rest of American chefs! The most common question I answered was, “What can you cook in this oven?” Another good sign that this is just the beginning…
